The wine

Three 75 cl bottles we loved in our latest tastings: a Champagne from the Aube, a white from the Loire and a red from Burgundy. Together they cost €200 instead of €210. Marie-Courtin, Présence Extra Brut 2020: Champagne from Chardonnay and Pinot Blanc, aged on the lees, with no added sulphites. Thibaud Boudignon, Anjou Blanc 2020: pure Chenin Blanc from grey schist and volcanic rock, with native yeasts. Clos des Vignes du Maynes, Bourgogne Cuvée Auguste 2022: Pinot Noir from old massal selections, on limestone and clay slopes.

Tasting notes

Présence: gritty, true, honest. Anjou Blanc: straight and saline, among the finest modern takes on Chenin. Cuvée Auguste: a heady nose and a silky palate; good today, great tomorrow.

The producer

Marie-Courtin, Thibaud Boudignon, Clos des Vignes du Maynes

Three growers who farm biodynamically. Marie-Courtin is the house in Polisot, in the Aube, run by Dominique Moreau: about two and a half hectares farmed with organic and biodynamic practices. Thibaud Boudignon, born in Bordeaux, worked at Château Soucherie before founding his domaine between Anjou and Savennières, devoted to Chenin Blanc. Julien Guillot farms his family’s vineyards at Clos des Vignes du Maynes biodynamically, in Cruzille, in the northern Mâconnais.

Food pairing

A whole dinner: Présence with the aperitif, fish and shellfish; Anjou Blanc with fish; Cuvée Auguste with white meat and cheese.
