The wine
The 2017 vintage from the Polisy vines in the Aube, bottled without dosage: mostly Pinot Noir, on the Kimmeridgian soils the Côte des Bar shares with Chablis.
Tasting notes
Taut and vibrant, with the frank acidity typical of cool Polisy.
The producer
André Beaufort
Grower with two distant terroirs: Ambonnay, a Grand Cru for Pinot Noir on the Montagne de Reims, and Polisy, in the Aube, on Kimmeridgian soils. Jacques Beaufort was among the first in Champagne to farm organically, from the late 1960s; the next generation now runs the house. Long ageing on the lees, disgorgement à la volée and old vintages released late.
Food pairing
White meat and poultry, pigeon, salmon, mushroom dishes, washed-rind cheeses.
Serve at 10–12 °C.
