The wine
Pinot Noir from the Ambonnay Grand Cru in the 2007 vintage, disgorged in 2022 after fifteen years on the lees: the power and depth of the Montagne de Reims.
Tasting notes
Powerful and deep; the house's old Ambonnay vintages show ripe fruit, candied citrus, brioche and honey.
The producer
André Beaufort
Grower with two distant terroirs: Ambonnay, a Grand Cru for Pinot Noir on the Montagne de Reims, and Polisy, in the Aube, on Kimmeridgian soils. Jacques Beaufort was among the first in Champagne to farm organically, from the late 1960s; the next generation now runs the house. Long ageing on the lees, disgorgement à la volée and old vintages released late.
Food pairing
Rich dishes: lobster, turbot with butter, roast poultry, truffle, long-aged Comté or Parmigiano.
Serve at 10–12 °C.
