The wine
From the house's oldest plots, a blend of the three grapes with some reserve wine, barrel-fermented and left long on the lees before a zero-dosage disgorgement.
Tasting notes
Slightly oxidative nose with a hint of exotic fruit; a rich palate with well-integrated oak, body and minerality.
The producer
Minière
Minière F&R, in Hermonville in the Massif de Saint-Thierry, founded in 1919 by great-grandfather Alfred and run since 2005 by brothers Frédéric and Rodolphe. Nearly 8 hectares farmed organically; a recognisable style: barrel ageing, no malolactic fermentation and long ageing on the lees.
Food pairing
Rich dishes: lobster, turbot with butter, roast poultry, truffle, long-aged Comté or Parmigiano.
Serve at 8–10 °C.
