The wine
Cuvée 744 is built on the 2016 harvest with 30% reserve wines; this Dégorgement Tardif version spent over seven and a half years on the lees before disgorgement. About 19,700 bottles were made.
Tasting notes
Dried white flowers, citrus peel, fresh bread and orchard fruit, with smoky and gingerbread hints; precise and chalky, with lively acidity and a long mineral finish.
The producer
Jacquesson
House in Dizy founded in 1798, run since 1974 by brothers Jean-Hervé and Laurent Chiquet. About 28 hectares on the chalk of the Vallée de la Marne and the Côte des Blancs. Since cuvée 728 it has made a numbered 'Cuvée 7xx' each year, built on that year's harvest, with very low dosage and late-disgorged versions.
Food pairing
Rich dishes: lobster, turbot with butter, roast poultry, truffle, long-aged Comté or Parmigiano.
Serve at 10–12 °C.
