The wine
The estate's historic cuvée: Chardonnay, Pinot Noir and Meunier from the sand, clay and chalk soils of Merfy, fermented with native yeasts.
Tasting notes
Fresh and deep, with a mineral edge and a fine tension between richness and lift.
The producer
Chartogne-Taillet
Grower estate in Merfy, in the Massif de Saint-Thierry north of Reims, led since 2006 by Alexandre Chartogne, who trained with Anselme Selosse. Organic practices since 2002, horse ploughing, sheep and hens among the vines: single-parcel Champagnes from native yeasts.
Food pairing
Oysters and raw seafood, sushi, fish tartare; also excellent as an aperitif with hard aged cheeses.
Serve at 8–10 °C.
