The wine
The 2015 Polisy vintage, a warm and generous year, disgorged in 2019 after a long rest on the lees.
Tasting notes
Fruitier than the Ambonnay wines, but with the firm acidity that comes from cool Polisy.
The producer
André Beaufort
Grower with two distant terroirs: Ambonnay, a Grand Cru for Pinot Noir on the Montagne de Reims, and Polisy, in the Aube, on Kimmeridgian soils. Jacques Beaufort was among the first in Champagne to farm organically, from the late 1960s; the next generation now runs the house. Long ageing on the lees, disgorgement à la volée and old vintages released late.
Food pairing
White meat and poultry, pigeon, salmon, mushroom dishes, washed-rind cheeses.
Serve at 10–12 °C.
